Potato Lasagne

This Potato Lasagne Recipe, couldn’t be any less like lasagne if it tried. It came about by accident (like most of my recipes) and as I was making it, I said “oh, it’s like a lasagne.” So here we are.

Nothing was measured, so all measurements below are guesstimations. It made enough for 2 adults and 2 children as a side dish.

INGREDIENTS

2 medium baking potatoes, washed and thinly sliced.

1/2 each a head of broccoli and cauliflower, washed and broken into florets.

2 cloves of garlic, roughly chopped

100ml of stock (I used chicken, to make it veggie, use veg stock)

Large handful of grated cheese

METHOD

Preheat oven to 180c (fan)

Add the garlic to the stock and stir

Steam or boil the broccoli and cauliflower until soft. Drain and mash.

In an oven proof dish layer potatoes and veg until all gone. Pour over the stock until the potatoes are almost covered. Sprinkle with cheese, cover with foil and bake for 40-55mins or until potatoes are cooked. Remove foil for last 10mins to brown the cheese if needed.

Eat. Enjoy.
