Spinach and Carrot Sausage Rolls

Everyone loves a sausage roll. Logan and Kaia can’t seem to walk by a Greggs without asking for one, thanks for that Granny! Every kid’s party we attend they’re always on the menu. I tend to serve them when hosting a play date, if I’m honest. I know most little ones will eat them and my two get very excited when they see them – honestly it’s like they don’t even appreciate the effort I put into their meals.

When making “kids food” I always try to make it myself, that way I can control the ingredients, salt and sugar content. 

Sausage rolls are so easy to make and you can add anything to them without little ones even realising. Yes I know hidden veg debate!

This recipe uses spinach and carrot, but you could try courgette, kale, mushrooms, anything that can be grated or chopped finely.

Makes 24 rolls. Can be eaten hot or cold, perfect for on the go snacks. They are also freezable too.

INGREDIENTS

1 pack premade puff pastry

1 pack of good quality sausages, skins removed and meat saved. Alternatively, buy some sausage meat.

1 large carrot, washed, skin left on and grated

2 large handfuls of spinach finely chopped

1tsp of garlic granules

1tsp of dried basil

1 handful of fresh basil leaves (optional) finely chopped

1 egg beaten

METHOD

Preheat oven to 180c (fan)

On a baking tray, unroll the pastry. Gently fold in half and open, make sure you can clearly see the crease for the half way point.

In a large bowl, mix all the ingredients until well combined.

Using a spoon spread the meat mixture on one half of the pastry.

Fold over the pastry and squeeze the edges tightly closed. You want it to be sealed.

Using a sharp knife, slice into squares, but do not separate.

Brush with egg.

Bake for 25-30mins.

Allow to cool slightly or completely.

Eat. Enjoy.
