Omelettes are something I really struggle with. For some reason I can’t get them to flip over properly or they fall apart when I take them out of the pan. It’s a nightmare.
So imagine my joy when I discovered a baked omelette recipe from https://babyledweaningcookbook.com/
I regularly make eggy muffins (recipe coming soon), so why did it never occur to me to make one big one?
Anyway, breakfast (and lunch and snack time) has been saved with this super simple baked omelette. Ready in 20mins, serve with toast and fruit.
This is great for weaning too, slice into strips, it’s soft to suck on and easy to pick up.
You know I’m a fan of any recipe that uses up veg that’s about to go soggy, so this is perfect. Be creative, use any veg you like.
This recipe makes one omelette that feeds 3, 2 littles and 1 adult.
INGREDIENTS
2 eggs
Large handful of grated cheese
Large handful of frozen peas
3 strips of precooked bacon, torn into little pieces
1/2 small red onion, diced
1/2 red pepper diced
METHOD
Preheat oven to 200c (fan)
Add all ingredients to an oven proof dish
Mix well, making sure egg is completely whisked
Bake for 20mins
Eat. Enjoy
